Diva Dairy & Gluten Free Brownies
1 stick vegan buttery substitute, melted (I used Blue Bonnet Light Stick)
1/2 cup unsweetened applesauce
1/2 cup dark cocoa powder (I used Hershey's Special Dark)
2 cups sugar
1 tsp instant coffee
4 eggs
2 tsp vanilla extract
3/4 cup gluten free flour blend (I used Bob's Red Mill All Purpose)
1/2 tsp xanthan gum
1/4 tsp sea salt
1/4 tsp baking soda
1 to 2 cups dairy & gluten free chocolate chips (I only used 1 cup as that was how much I had) - optional
1 cup chopped walnuts or nuts of choice - optional
Combine the melted buttery alternative, apple sauce, cocoa powder, sugar, instant coffee, eggs, and vanilla.
Stir in the gluten free flour blend, xanthan gum, sea salt, and baking soda.
Fold in the chocolate chips and nuts if using.
Spread into a greased 9 x 13 baking pan.
Bake at 350 F for 30 to 45 minutes or until done.
OOOOhhhh I love brownies and can't even imagine living without them. I hear you on the craving. Looks to me as these brownies were perfect! The photo works well... shows that nice and rich chewy chocolate goodness.

ReplyDeleteThese brownies were a huge hit at a party I went to. Nobody noticed they were dairy and gluten free. I used regular coco powder and smashed up a Lindt 85% cocoa candy bar. They looked too runny for me so I added 1 full cup of flower. Don't know if it was necessary, but they were so gooey and delicious.
ReplyDeleteAdding more flour is fine :) At least in these brownies! I have added up to 1 1/4 cups flour if I was looking for a more cake like brownie than the gooey these typically can be :)

ReplyDeleteYou could omit the coffee if you wanted. However, the coffee makes the chocolate taste even more chocolaty! :)
