I am so glad that you stopped by to visit. My name is Stephanie. I live in a tiny town in Wyoming where it is 120 miles round trip to the nearest grocery store! Yet, somehow I still manage to cook, bake, and eat dairy & gluten free. I technically have an intolerance to dairy and gluten; however, I also have a few other food allergies and intolerances such as shellfish, pumpkin and hard squash, bananas, and carrageenan to just name a few.
I was really sick with a number of several gastrointestinal symptoms for a number of months. I underwent every test that the allergists and GI Specialists could think to throw at me. I had skin tests and blood tests, enoscopies and colonoscopies, upper GI series and lower GI series, nuclear gastric emptying, MRIs, and CT Scans, and so much more. Nothing came back with a conclusive answer. Out of desperation I started keeping a food diary that recorded what I ate and the symptoms that followed. It was through this that we found the issue was cow's milk dairy. After completely eliminating dairy, I began to feel better!! However, after about a year I began to start the crazy cycle of gastrointestinal symptoms yet again. This time instead of letting the doctors poke and prod me with every test known to man I diligently started my food diary again. This time I found that the problem was gluten. I eliminated the gluten along with the dairy and found that I the gastrointestinal symptoms reduced greatly again.
I also have been diagnosed with the genetic condition called Ehlers-Danlos Syndrome (EDS). In all honestly I have quite the laundry list of health issues on top of the EDS; however, life is meant to be lived and not be ruled by the monikers attached to each of us.
